You are busy and feel as though you are always strapped for time. You wish you could eat healthy, but you’re convinced that preparing healthy meals takes hours in the kitchen. Your mornings are always rushed trying to get out the door for work, and there is no way you have time to prepare a healthy lunch to take with you. Does this sound like you?
Guess what? I have a solution for you!
I’m sharing one of my top time savers in the kitchen – a healthy lunch in under 5 minutes that you can even prepare for a few days in advance.
Ready? Here it goes…
Step One (not included in the 5 min!) - Purchase the following ingredients at the grocery store: pre-packaged, pre-washed greens, other in-season veggies that you like and keep well, such as cucumbers and onions, a variety of nuts and seeds, and high quality oils and vinegars. Remember that organic is always best, and buy what you like and you know you will eat.
Step Two - Set out multiple medium sized food storage containers, and set out the same number of small containers – Tupperware, large mason jars, whatever you have to store leftovers. I typically set up 4 containers, and make lunches for my husband and myself for 2 days.
Step Three - Fill each container with greens.
Step Four - Dice/chop other veggies and put a handful into each container.
Step five - Top off with a tablespoon or two of nuts and seeds (or other toppings of your choice like goat cheese, dried cranberries, seaweed, etc.)
Step Six - In the small containers, place a tablespoon each of oil of your choice and vinegar of your choice. Place small container inside large container.
Step Seven - Take one container for lunch that day, and leave the others stored in the fridge for remaining days. When it’s time to eat, pour the oil and vinegar dressing over the salad, stir to coat, and enjoy!
Pretty simple, huh?! That means no more excuses! You CAN make a healthy lunch and bring it with you to work – there is no need to grab something through a drive through or in a cafeteria any more!

I already do this salad thing myself. My combination is a little different but on the same idea. I use actual salad dressing since I have a refrigerator at work I can leave it in. I make up four days worth of salads, add some rotisserie chicken for the protein and have my lunch all ready to go when I leave home for the gym at 5:45 every morning. Takes me just a few minutes on a Sunday night to make these and then I can just grab and go!
